Fine Dining Holiday Dinner for 12

I love my repeat Clients! We were asked to cook a full service, fully plated fine dining Holiday Dinner for 12. I was thrilled about their menu. I am drooling just thinking about it. Hors D’oeuvres:

Champagne Oysters with Beurre Blanc and Herbs

Mini Phyllo Cups with candied Walnuts, Brie and garnished with Apple

First Course:

Spinach Salad with thinly sliced Red Onion and Pomegranate seeds served with Balsamic Vinaigrette

Choice of Entree:

Pan Seared Salmon served with Cream Sauce, Pea Sprouts, Peas and Dill

Beef Wellington served with a Potato Puree, Demi Glace and roasted Carrots
