Did someone say Fiesta? When Client R. contacted me regarding her Mother’s “surprise” Birthday Dinner Party she also mentioned Mexican Food and Demos. Do I have your attention now? Their menu was festive and incorporated a couple tricks we use in the kitchen. Red Snapper Ceviche garnished with Jalapeno, Cilantro and Lime Foam. We demonstrated how to make foam.

Tomatillo Avocado Salsa, Guacamole topped with Pomegranate Seeds and served with Blue Corn Chips. We demonstrated an easy way to remove the seeds from a pomegranate.

Grilled Carne and Pollo Asada, served with Pico De Gallo and Tortillas.

Chile Rellenos stuffed with Chorizo and drizzled with Mexican Crema and garnished with Cilantro.
